  • 1kg of your preferred meat (chicken, goat, or beef)
  • 2 large onions, finely chopped
  • 4 cloves of garlic, minced
  • 1 tablespoon ginger, grated
  • 2 ripe tomatoes, pureed
  • 2 teaspoons ground turmeric
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground paprika
  • ½ teaspoon ground cinnamon
  • 2 tablespoons vegetable oil
  • Banana leaves for wrapping
  • Salt and pepper to taste

Instructions:

  1. Marinate the meat with onions, garlic, ginger, pureed tomatoes, turmeric, cumin, coriander, paprika, cinnamon, vegetable oil, salt, and pepper. Ensure that the meat is well-coated with the marinade mixture.
  2. Allow the meat to marinate for at least 4 hours, preferably overnight, in the refrigerator.
  3. Preheat your oven to 180°C (350°F).
  4. Take a large banana leaf and place a generous portion of marinated meat in the center.
  5. Wrap the banana leaf around the meat tightly, creating a secure parcel.
  6. Repeat the process for the remaining meat and banana leaves.
  7. Place the wrapped parcels on a baking sheet and transfer them to the preheated oven.
  8. Bake the Luwombo for approximately 2 to 3 hours, or until the meat is tender and infused with the flavors of the spices.
  9. Once cooked, carefully unwrap the banana leaves and serve the delicious Luwombo with steamed rice or matooke (mashed plantains).
